Our approach is very simple. We let time do its work and add nothing to the sauce but natural ingredients. Everything we do is by hand including the sorting, washing and checking of every single pepper. We know that no other hot sauce maker does this. Why? Because it is an expensive and time consuming process, to make the product and lay it down like wine for up to three years to develop before bottling.
